It should be used directly before heat treatment, and directly on the raw material. The sauce is very efficient, combats unfavorable organic compounds, eliminates characteristic throat irritation during smoking, protects against mold, fungus, and bacteria, enhances the final product, improves combustion and smoke. The sauce should be spread on the raw material using a sprayer. The efficiency largely depends on the quality of the raw material, usually 1 liter is used per 50-100 kg of raw material.
